Peanut Butter Granola Bites - A Yummy, Healthy Snack

Peanut Butter Granola Bites

I’m not really set on that name and if you have any other suggestions after reading this post, please share them with me!  
I’ve been on a quest to eat healthier/cleaner for at least a year now and since I am pregnant, I have really started taking it more seriously. I am currently trying to cut out sugars, especially. This makes grabbing a snack when there isn’t much time very challenging. One thing I would often grab is a granola bar but they are chock full of sugar and not really very good for you at all. So, I’ve been on the hunt for some sort of homemade granola bar. I came across several but two really stood out to me. Then, I decided to combine them to make my own recipe. I’m really happy with the outcome so I wanted to share it with the World Wide Web via Blogspot. I am seriously crushing these things and I’m very thankful to have a healthier alternative when I need something quick to eat.
So, without further ado, here they are!
¾ cup oats (I like to use old-fashioned but quick oats work, too)
1 cup unsweetened coconut flakes (this time I used these finely shredded flakes that I really like the texture of)
½ cup coconut oil, softened or melted
½ cup creamy peanut butter (or nut butter, if you prefer)
¼ cup ground flaxseed
1 tsp vanilla extract
1 Tbsp honey
2/3 cup dark chocolate chips (mini chips are recommended but I haven’t had them yet and the regular size works fine)
Mix all the ingredients, except the dark chocolate chips. Mix in dark chocolate chips. Refrigerate for approximately 10-20 minutes. Form into balls and place back in refrigerator until firm. If the weather is cool, you could store at room temperature but if it’s warm out, the coconut oil will probably start melting. I have just kept mine stored in the refrigerator. Enjoy!

*Next, I’m going to try adding raisins instead of chocolate chips and maybe adding some cinnamon. I’ll let you know how they turn out!
